Rainy day recipes

With Easter weekend behind us and the 2-week school holiday now in full swing, new ideas on how to entertain little ones hyped up on chocolate eggs are much in demand. My fish bowl jelly, usually only wheeled out at birthday parties, now comes into its own as a rainy day project. Apart from the initial pouring of boiling water, the rest is easy for them to take charge of with little or no supervision. My kids love coming back every hour (timers are set!) to build up the layers, and the finished jelly makes a tasty (and relatively healthy) dessert for dinner.

Fish Bowl Jelly

Serves 4 - 6

8 sheets of gelatine
1 litre white grape juice
a few drops of blue food colouring
Maltesers and oat biscuits for the gravel
fish-shaped sweets

Soak the gelatine in cold water for 8 minutes.
Meanwhile, boil a kettle and pour 100 ml into a measuring jug. Top up with 100 ml of the grape juice.
Squeeze out the gelatine sheets, then whisk them into the measuring jug with a fork.
Top up with grape juice to the 1 litre mark, then stir in a few drops of food colouring. Go easy – too dark and you won’t be able to see the fishes!
Arrange a single layer of Maltesers and chunks of biscuit in the bottom of a glass bowl, then pour in enough jelly to just cover it.
Arrange a few starfish-shaped sweets on top, then chill for 1 hour or until set.
You can now continue to build up the jelly in 2 cm layers, adding a few more fish sweets each time and chilling for an hour until all the jelly has been used up.
Save a few shark-shaped sweets to decorate the top or why not add a few Lego swimmers if you have them in the play box?!

If you have a go-to rainy day recipe that your children like to make, let us know in the comments box below – we’re all going to need a bit of inspiration to survive the next couple of weeks!

Happy nibbling!
